Baked Fish Sticks

Ingredients:

  • 2 large organic eggs, lightly beaten
  • Himalayan Pink Sea Salt and pepper
  • 2 cups of whole wheat bread crumbs (tear 4 slices of whole wheat bread and place in food processor until small crumbs)
  • 2 tbsp of garlic powder
  • 2 tbsp of olive oil
  • 1 1/2 lbs. wild caught cod fillets 

Directions:

Pre-heat oven to 475.  Line a baking sheet with aluminum foil and spray lightly olive oil (I use my Misto).  Set aside.

Cut cod into strips.  
Place the egg in a large bowl and generously season with salt and pepper.  In another bowl combine, bread crumbs, garlic powder, and olive oil.  Dip the cod into the eggs (shaking off an excess) and then into the breadcrumbs.  Press breadcrumbs on to the fish to be sure that they stick and then place each breaded strip onto the prepared baking sheet.
Pop in the oven and bake for 12-15 minutes or until cooked through.  Sprinkle with a little more salt as soon as you pull them put of the oven. 

Quiche

Ingredients:

  • 4 eggs lightly beaten
  • 2 sweet apple chicken sausage links chopped
  • 1/2 cup pepper jack cheese
  • 1 cup organic milk
  • 3 small sweet peppers chopped
  • 1 tomato chopped
  • salt and pepper
  • homemade pie crust using this crust recipe:

Directions:

Preheat oven to 400. 
Combine all ingredients into a bowl.   
In pie dish make pie crust.
Pour contents from the bowl into the homemade pie crust.
Bake for 25-35 minutes, or until the middle of the quiche is fully cooked.  Let cool for 5-10 minutes before cutting.

BBQ Meatballs and Rice

Ingredients:

For meatballs:
  • 1 1/2 lbs ground turkey or grass fed beef
  • 3/4 cups oats
  • 1 cup milk (cow or almond)
  • 3 TBS Very Finely Minced Onion
  • 1 1/2 tsp Salt
  •  Plenty Of Ground Black Pepper, to taste
For sauce:
  • 1 cup ketchup
  • 2  TBS honey
  • 3 TBS vinegar
  • 2 TBS amino acids
  • 4 TBS onion minced (or onion powder)
  • 1 dash tabasco

Extras:

  • Chop remaining onion
  • Chop green bell pepper

Directions:

Combine all meatball ingredients. Roll in to medium-small balls and place on cookie sheet. Place sheet in freezer for 5 minutes.

While the meatballs are in freezer combine all sauce ingredients in a small bowl.

After 5 minutes, remove meatballs. Brown meatballs in olive oil. Then pour sauce and chopped onion and bell pepper into pan and simmer for approximately 20 mins. Serve over brown rice.
