PIE NIGHT!

Tonight we had pie!!  

Mexican Pie and Peanut Butter Pie!


For the Mexican Pie I took this recipe and cleaned it up!

My ingredients:
pound organic ground beefmedium onion, chopped (1/2 cup)
mexican seasoning (garlic, cumin, cilantro, salt, and pepper)
1 can organic corn (drained)
2 organic tomatoes
1 cup organic milk
2 organic eggs
1/2 cup homemade bisquick mix (recipe below)
3/4 cup pepper jack cheese (shredded)
toppings:
homemade salsa
avocado
homemade bisquick mix (makes 1/2 cup):
cup organic all purpose flour
1/4 cup whole wheat flour
3/4 tsp baking powder
1/8 tsp himalayan salt
1/8 tsp baking soda
pinch of organic sugar
1/2 TBS organic butter
1. stir dry ingredients in a bowl
2. cut in butter until uniform mixture with small lumps
Heat oven to 400°F. Grease 9-inch pie plate (I used avocado oil).   Cook ground beef and onion in 10-inch skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix, corn and tomatoes.  Spoon in to pie dish.Bake about 25 minutes.  Sprinkle with cheese and continue to bake 8-10 minutes longer. Cool 5 minutes and serve with your favorite toppings.








Next up was dessert..peanut butter pie!  I started with this recipe and made a few changes:
The only major change I made was instead of using bananas I used organic cream cheese and about a tablespoon (or 2) of honey in the filling!  Turned out yummy! (I've also made it exactly as the recipes states - it is good that way too!)
